The Pitco Dial Kit 2 D, Off-400-200 is a direct replacement dial kit for Pitco commercial fryers. Using the correct dial kit ensures the scale positions correspond exactly to the thermostat's calibrated settings, enabling operators to select the correct frying temperature with confidence.
Over time, the original dial can fade from UV and heat exposure, crack from thermal stress, or slip on its shaft, making it impossible to reliably set or read the fryer's temperature. An illegible or miscalibrated dial is a food safety risk — operators unable to read temperature settings may run the fryer too hot, degrading oil rapidly and risking ignition, or too cool, producing undercooked food.
