The Watlow controller in the Einstein oven series is responsible for the oven's advanced programmable baking capabilities that distinguish the Einstein from Doyon's manually-controlled deck oven range. The Einstein uses the Watlow's multi-setpoint programming to execute complex bake cycles with multiple temperature stages, time sequences, and steam or damper events, allowing bakeries to develop and store repeatable programs for different products. The Watlow platform provides the precise PID temperature control and data retention that make programmed baking possible.
Signs that the Watlow controller kit requires replacement include the oven failing to execute programmed bake cycles correctly, loss of stored baking programs after power cycling, the display showing incorrect temperatures or fault codes specific to the Watlow controller, or the controller becoming unresponsive to operator input.
