The dough hook is the primary mixing tool for bread and other yeast-leavened dough production in the spiral mixer, designed to develop gluten structure through the stretching and folding action it applies to the dough during the mixing cycle.

    AISI 431 stainless steel is a martensitic stainless grade with high tensile strength and good corrosion resistance, chosen for dough hook applications because it can withstand the high mechanical stresses of commercial dough mixing while resisting surface corrosion from the moisture and acidic compounds in dough. The hook's geometry matches the spiral arm and bowl rotation speeds of the AFR150 mixer to produce the optimal gluten development rate for the product recipes the mixer is designed to process.
