The 240V rating of the ELE168 distinguishes it from the 208V ELE169 variant. Using the correctly rated element for the supply voltage is critical — a 240V element installed on a 208V supply will operate at reduced wattage (approximately 75% of rated output), extending the time required to produce steam and potentially compromising steam volume. Conversely, a 208V element on a 240V supply will overheat and fail prematurely. The ELE168 is the correct choice for 240V steam pan applications.
Failure signs are the same as for other immersion elements: no or reduced steam production, element circuit breaker tripping, or open circuit on element continuity testing. Scale buildup from hard water is a common degrader of immersion element performance in steam pan applications, and in severe cases can cause element failure through localized hot spots at scaled areas.
Replacement should be performed by a qualified technician with the oven de-energized, the steam pan drained, and the water supply shut off. After installing the new ELE168, all connections are checked and the steam system is tested for leaks and correct steam production before the oven is returned to service.
