Immersion heating elements are significantly more efficient at heating water than surface-mounted elements because the entire heated surface area is in direct contact with the water rather than transferring heat through the pan wall. The ELE169 at 3,000 watts provides the heat input needed for rapid water-to-steam conversion at the steam injection demand rates used in Doyon steam oven baking programs. The 208V rating makes this element compatible with North American commercial 208V three-phase electrical services.
Signs that the immersion element has failed include the oven failing to produce steam or producing significantly reduced steam volume, the water in the steam pan remaining cold when the steam system is active, the element circuit breaker tripping, or continuity testing showing an open circuit across the element terminals. Physical inspection may also reveal visible burning, pitting, or scale buildup on the element sheath that has degraded its heating performance.
Replacement should be performed by a qualified technician with the oven de-energized. The steam pan must be drained and cooled before the element is removed. After installing the new ELE169, all connections should be checked for security, the pan is refilled, and the steam system is tested for leaks and correct steam production at operating temperature before the oven is returned to service.
