The blower/motor assembly drives the internal fan that circulates air throughout the proofer-oven cavity. During the proofing phase, it distributes warm, moist air to maintain uniform temperature and humidity for consistent dough development. During the baking phase, it moves heated air over the elements and across the product for even convective baking. Reliable, continuous airflow in both phases is critical to product quality.
A failing blower/motor assembly in a proofer-oven typically manifests as reduced or absent airflow, motor bearing noise or seizure, visible motor overheating, or thermal overload tripping. The transition between proofing and baking cycles can accelerate motor wear if the motor is not rated for the full temperature range of the combined operation.
