The Doyon ELM731 is a genuine OEM Blower Motor Assembly operating at 115V/60Hz and 3,000 RPM, designed for the Doyon E236 and E336 proofer cabinets. This assembly provides the forced-air circulation required to distribute heated, humidified air uniformly throughout the proofer cavity during dough proofing cycles. As a factory-original component, it ensures the correct airflow volume and motor mounting geometry for the E236/E336 proofer design.

The blower motor assembly circulates conditioned air across the heating and humidification elements and distributes it evenly throughout the proofer interior. Uniform air movement is essential for consistent dough proofing — without adequate circulation, temperature and humidity stratification occurs, leading to uneven dough development across the proofer load.

A failing blower motor typically presents as noticeably reduced airflow, audible bearing noise or motor humming without impeller movement, uneven proofing results with some dough pieces over-proofed while others remain under-developed, or visible condensation pooling rather than distributing evenly within the cabinet.

Replacement should be performed by a trained technician with the proofer de-energized.
