The Doyon ELM800M is a genuine OEM single-phase, dual-speed, 3/4 HP motor operating at 115V or 230V, designed for Doyon deck ovens and proofer-ovens that require a two-speed fan drive. The dual-speed capability allows the equipment to operate the circulating fan at high speed for rapid heat recovery after loading and at low speed for steady-state baking or proofing, optimizing both energy use and product quality.

This motor drives the internal circulating fan that distributes heated air throughout the oven or proofer cavity. In high-speed mode, it rapidly recovers the setpoint temperature after the door is opened and product is loaded. In low-speed mode, it maintains gentle, consistent airflow during the active bake or proof cycle, preventing product surface drying or uneven browning.

Signs of motor failure include the fan operating at only one of the two speeds, the motor humming but failing to start, excessive heat from the motor housing, or thermal overload protection tripping repeatedly. Bearing noise during operation is also an indicator of impending motor failure that should prompt immediate replacement to prevent production downtime.

Replacement requires a qualified technician.
