The Doyon ELS887 is a genuine OEM 120V water solenoid valve with 1/4" pipe connection, designed for use in Doyon steam injection ovens and proofer-ovens equipped with a water supply system for steam production. The 120V coil activates on signal from the oven control system to open the valve and allow water to flow to the steam pan or direct steam generator, then closes on de-energization to stop water flow.

The water solenoid valve is the automated water supply control point for the steam system. When the controller calls for steam generation, it energizes the ELS887 coil, opening the valve to supply water to the steam pan. The flow rate and frequency of valve openings determine the steam volume introduced into the baking chamber. Precise valve operation is essential for controlled steam injection and consistent baking results in steam oven applications.

Signs of valve failure include no water flow reaching the steam pan despite the control system signaling for fill (valve coil failure or valve body seized closed), continuous water flow even when no steam is required (valve stuck open or seat damaged), or water leaking at the valve body indicating seal failure. A failed valve can result in either no steam production or uncontrolled flooding of the steam pan.

Replacement should be performed by a qualified technician. The upstream water supply must be shut off and the line depressurized before removal. After installation of the new valve, all connections should be checked for leaks and the valve should be tested through several open/close cycles before the oven is returned to service.
