The Doyon ELT515-PIZ is a genuine OEM Digital Temperature Control featuring an Omron digital controller, purpose-built for the Doyon PIZ-series pizza deck ovens. Operating with a temperature range of 0 to 600 degrees Fahrenheit, this controller monitors thermocouple input from the oven deck and cycles the heating elements to maintain precise setpoint temperatures throughout the baking cycle.

The digital temperature control is the thermal management brain of the PIZ oven. It continuously compares the thermocouple signal from the deck with the operator-set temperature, activating the heating elements when below setpoint and de-activating them when setpoint is reached. This precise on/off cycling maintains deck temperature within a tight range for consistent pizza crust results across every bake.

A failing temperature controller typically presents as the oven display showing error codes such as E1 for open thermocouple or E2 for over-temperature, the oven not holding its setpoint and cycling erratically, or the display going blank while the oven remains energized. In some cases, the controller may default to maximum output causing uncontrolled temperature rise.

Replacement requires a trained technician. The wiring diagram on the oven or controller should be referenced before disconnecting any leads. After installing the new Omron controller, the setpoint temperature should be confirmed and the controller observed through at least one full heat-and-hold cycle to verify proper operation before resuming pizza production.
