The Doyon ELT532 is a genuine OEM Type K Thermocouple designed for Doyon deck ovens and high-temperature baking equipment using Type K temperature sensing. The Type K thermocouple uses a chromel-alumel junction capable of measuring temperatures from room temperature up to approximately 2,300 degrees Fahrenheit, providing accurate and reliable temperature feedback to the oven controller across the full commercial baking temperature range.

As the temperature sensing element in the oven control loop, the ELT532 thermocouple generates a millivolt signal that is directly proportional to the measured temperature. This signal is read by the digital controller, which uses it to modulate the heating elements and maintain the setpoint temperature. The thermocouple's accuracy and signal stability are fundamental to the controller's ability to hold tight temperature tolerances during production.

Signs that the thermocouple requires replacement include the controller displaying open circuit or short circuit fault codes, temperature readings that are frozen at a single value or fluctuating wildly, or the controller consistently reading a temperature that deviates significantly from a calibrated reference thermometer placed in the same oven location. Damaged lead insulation from the high-temperature oven environment is a common cause of thermocouple failure.

Replacement is performed by a qualified technician. The thermocouple is extracted from its protective well, the leads are disconnected from the controller's thermocouple input terminals using the correct polarity, and the new ELT532 is installed and connected. A reference temperature check should be performed after installation to verify accurate controller readings.
