Details
The ELT610 thermostat controls the heating element circuit in the proofer or low-temperature oven by sensing the cavity temperature through its capillary-bulb system. When the cavity temperature drops below the setpoint, the thermostat closes the heating circuit to energize the element. When the setpoint is reached, it opens the circuit to stop heating. This on/off cycling action maintains the cavity temperature within a narrow band around the setpoint throughout the equipment's operating period.
Signs of ELT610 failure include the proofer or oven temperature running significantly above or below the 250°F setpoint region, the heater running continuously without cycling off (stuck closed), or the heater not activating when the cavity is cold (stuck open). A damaged or kinked capillary tube, which causes the sensing gas to escape, will also cause the thermostat to fail open (heater stays off).
Replacement should be performed by a qualified technician. The capillary tube must be handled carefully to avoid kinks during removal and reinstallation. The sensing bulb must be correctly placed in the sensing location of the equipment, and after installation the thermostat setpoint should be verified against a calibrated reference thermometer at the operating temperature.
