Proper humidity control is essential in a commercial proofer. The ELT610C monitors the humidity level and activates the humidifier when it drops below the setpoint, then de-activates it when the target humidity is restored. Maintaining the correct moisture level prevents dough skin formation, ensures uniform yeast activity, and produces consistent proofing results across all positions in the cabinet.
Signs of thermostat failure include humidity that is persistently too high, leading to condensation dripping onto the product, or too low, causing the dough surface to dry and form a skin. An operator may also notice that the humidifier runs continuously without cycling off, or fails to activate at all even when the cabinet appears dry, both of which indicate a failed thermostat switching mechanism.
Replacement should be performed by a qualified technician with the proofer de-energized. Access to the control compartment is required to reach the thermostat and its sensing bulb. The capillary tube must be handled carefully during installation to avoid kinking, and the sensing bulb should be fully inserted into the specified location within the proofer cavity.
