At a 700°F range, the ELT680 is suited for the primary temperature control position in high-temperature deck ovens where hearth baking, pizza baking, or artisan bread production requires oven temperatures at or approaching the upper end of conventional commercial oven ranges. The capillary-bulb sensing system of the Ranco thermostat provides direct thermal sensing of the oven cavity or deck surface temperature, with the capillary bulb positioned in the sensing location specified by the oven design.
Signs of ELT680 failure include the oven temperature running significantly above or below the thermostat dial setting, the oven heating continuously without cycling off at setpoint (indicating a stuck-closed thermostat), or the oven failing to heat despite being set above ambient temperature (indicating a stuck-open thermostat or open capillary). The capillary tube must also be inspected for kinks or damage, as a breached capillary will cause the thermostat to fail in the open position.
Replacement should be performed by a qualified technician. The capillary bulb is carefully removed from its sensing position, the thermostat body is removed from the control panel, and the new ELT680 is installed. The capillary must be routed and secured without kinking, and the bulb must be fully inserted into its sensing well. A calibration check against a reference thermometer at the nominal setpoint is recommended after installation.
