The Doyon ELT802 is a genuine OEM resistance temperature detector (RTD) probe with 36-inch leads and a 1,000 ohm nominal resistance at 0 degrees Celsius, designed for Doyon ovens and proofers using a Pt1000 RTD-based temperature measurement system. RTDs provide higher accuracy and better long-term stability than thermocouples, making them the preferred temperature sensor in precision-controlled baking environments.

The ELT802 RTD probe is inserted into the oven or proofer cavity through a sensing well, and its resistance value changes linearly with temperature. The connected controller reads this resistance and converts it to a temperature display and control signal. The 36-inch lead length provides the flexibility needed to route the probe wiring from the sensing location in the oven cavity to the controller without extension wiring. The 1K Pt1000 standard ensures compatibility with all Doyon controllers designed for this probe type.

Signs that the RTD probe requires replacement include the controller showing an error code for an open or short sensor, the temperature reading being frozen at a fixed value or displaying an obviously incorrect temperature, the controller unable to hold the setpoint temperature accurately despite the sensor appearing to respond, or physical damage to the probe tip or lead wires from the oven environment.

Replacement should be performed by a qualified technician. The probe is withdrawn from its sensing well after the equipment is de-energized and cooled. The lead connections at the controller are released, the new ELT802 is inserted into the well and routed to the controller, and connections are made per the controller's RTD wiring instructions. A temperature calibration verification is recommended after installation.
