The Doyon GAD190 is a genuine OEM ignition electrode designed for use across all Doyon gas-fired baking equipment models. The ignition electrode serves as the spark source that ignites the main burner or pilot flame when the gas valve opens during each ignition cycle. The electrode is positioned precisely relative to the burner to produce a reliable spark in the correct location for fast, consistent flame establishment.

The ignition system in commercial gas ovens operates by energizing the ignition module, which drives a high-voltage spark across the electrode gap to the burner ground. The spark ignites the gas-air mixture at the burner, and the flame detection system confirms ignition before the ignition module ends the spark cycle. A reliable electrode gap and tip condition are essential for fast and consistent ignition, particularly in high-production environments where the burner may cycle frequently throughout the day.

Signs that the ignition electrode requires replacement include the burner failing to light despite the gas valve opening (no spark audible), intermittent ignition with multiple retry cycles required, visible electrode tip erosion or cracking of the ceramic insulator, or carbon fouling of the electrode tip that has reduced or shorted the spark gap. A cracked ceramic insulator is a common failure mode and can cause the high-voltage spark to track along the insulator surface rather than across the intended electrode gap.

Replacement should be performed by a qualified gas appliance technician. The electrode is removed from the burner assembly by releasing its mounting hardware and disconnecting the lead wire.
