Details
The bottom roller assembly includes the roller cylinder, the shaft, and the bearings that allow the roller to turn freely as dough passes through the nip. In most dough sheeter designs, the bottom roller is the fixed-position roller while the top roller adjusts to vary the nip gap. The surface condition and cylindrical accuracy of the bottom roller directly determines the consistency of the lower face of the dough sheet and the parallelism of the nip gap across the roller width.
Signs of bottom roller failure include dough sheets with an uneven or rough lower surface that cannot be attributed to dough formulation, bearing noise or roughness when the roller is spun by hand, visible corrosion or pitting on the roller surface from the dough environment, or play in the roller bearings that allows the roller to wobble axially under load.
Replacement should be performed by a qualified technician following the sheeter's roller removal procedure. The sheeter is de-energized, the lower portion of the sheeter is accessed, the old roller assembly is extracted from its bearing seats, and the new PC100011-1 is installed. The nip gap should be verified for parallelism across the roller width after installation before production use resumes.
