The Doyon PC100011-2 is a genuine OEM Bottom Roller Assembly replacement for the Doyon LMF and LMA series dough sheeters. This roller forms the lower surface of the sheeting nip, working in conjunction with the adjustable top roller to create the precise gap that determines the thickness of the dough sheet being processed. As a factory-original part, it provides the correct surface finish, diameter tolerances, and bearing configuration required by the Doyon sheeter design.

The bottom roller assembly is a critical precision component in the sheeting process. It rotates at the driven speed of the sheeter and, together with the top roller, applies controlled pressure to the dough as it passes through the nip. Roller runout and surface condition directly impact product quality, as any deviation from roundness or surface uniformity will produce dough sheets of inconsistent thickness.

Signs of roller failure include dough sheets that vary in thickness across their width, visible scoring or flat spots on the roller surface, unusual noise from roller bearings during operation, or dough sticking to and wrapping around the roller rather than exiting the nip cleanly.
