The top roller assembly works in precise coordination with the bottom roller to apply controlled compression to the dough as it passes through the nip. The clearance between the two rollers determines the final sheet thickness, and the surface condition of the top roller directly affects the quality of the sheet face, the tendency for dough to stick, and the overall consistency of the sheeted product.
Failure or wear of the top roller presents as dough sheets with uneven thickness across the width, audible bearing noise from the top roller shaft, visible scoring or surface damage on the roller, or the roller gap adjustment becoming inaccurate due to worn adjustment hardware in the roller mounting assembly.
Replacement should be performed by a qualified technician with the sheeter locked out. The tension spring on the adjustment mechanism is released to take pressure off the top roller, the roller retaining hardware is removed, and the new top roller assembly is installed. The nip gap should be set to the correct specification and verified with a test sheet before resuming production.
