The Doyon Front Roller Scraper Spring (Part# PC100052-1) is a genuine OEM replacement cutting/scraper blade for Doyon bakery ovens and proofing equipment. This blade cuts, slices, or scrapes product as part of the mechanical process on Doyon bakery ovens and proofing equipment, maintaining the clearance or edge needed for consistent results.
Blades like this are in constant contact with product and, in many cases, a barrel, drum, or opposing surface, which gradually dulls the cutting edge or wears down the scraping surface. A worn blade typically shows up as an uneven cut, product buildup that should have been scraped away, or increased load on the motor driving it.
Replacement should be performed by a qualified technician. De-energize the equipment and lock out the drive mechanism before accessing the blade, then remove the fasteners securing it and take out the worn blade.
