Details
The slicer blade is the critical cutting element in the bread slicing operation. As the slicer cycles, the blade reciprocates or traverses through the loaf in a controlled path, and the sharpness and geometry of the blade determine the quality of each slice face. A properly maintained blade produces uniform slices with clean edges that present well for retail packaging or foodservice presentation.
Signs that the blade needs replacement include ragged or torn slice faces, excessive product crumbing at the cut surface, visible nicks or chips on the blade edge, or blade breakage during operation.
