The water pan assembly is the steam source in Doyon steam oven models. When the control system calls for steam, the solenoid valve opens to supply water to the pan, and the 208V, 3,000W immersion element rapidly heats the water to produce steam that is released into the oven cavity. Steam injection is critical for many commercial baking applications including artisan breads, croissants, and other products where steam in the early baking phase produces the correct crust characteristics and oven spring.
Signs that the water pan assembly requires replacement include visible corrosion, pitting, or scale buildup on the pan body that cannot be removed by descaling, a failed immersion element indicated by the water heating but not producing steam or the element circuit failing continuity testing, or physical damage to the pan including cracks or joint failures causing water leakage into the oven cavity.
