The Hand Hole Gasket 5-3/8" X 7-3/8" (Part# 07106) is a Cleveland-compatible replacement hand hole gasket for use in Cleveland commercial steam jacketed kettles and steam-heated cooking equipment. The hand hole gasket seals the hand hole access cover on the steam jacket, preventing steam and pressure from escaping around the cover flange during equipment operation.
Hand hole gaskets are subject to the repeated pressurization and depressurization cycles of the steam jacket, as well as the high temperatures and moisture exposure inherent to jacket operation. Over time, the gasket material compresses, hardens, or deteriorates, resulting in steam leaks around the hand hole cover that reduce jacket pressure, decrease cooking efficiency, and create safety hazards in the kitchen.
Hand hole gasket replacement must be performed by a qualified service technician with the steam jacket fully depressurized, cooled to ambient temperature, and the unit disconnected from all energy sources. Remove the hand hole cover bolts, lift the cover, and carefully remove the old gasket from the seating surface. Clean the flange surfaces thoroughly and install the new Hand Hole Gasket 5-3/8" X 7-3/8", ensuring even placement before reinstalling the cover. Torque all fasteners evenly to the specification in the Cleveland service manual, then conduct a pressure test before returning the unit to service.
