The Pitco Heating Element is a direct replacement electric resistance heating element for Pitco commercial electric fryers. Immersed directly in the cooking oil, the element converts electrical energy to heat, raising the oil to the set frying temperature and recovering temperature quickly between cook loads. Using the correct heating element ensures the proper watt density, voltage rating, and physical dimensions to fit the fryer's element mounting and deliver the rated heat output the fryer was designed to produce.
Over time, the original heating element can fail from thermal fatigue of the resistance wire, develop scale buildup on the sheath that insulates it from the oil and causes it to overheat internally, or suffer mechanical damage to the element sheath from basket contact or cleaning tools. A failed or degraded element reduces fryer heat output, extends recovery times, increases energy consumption per pound of food cooked, and ultimately fails to bring the oil to temperature at all. Replacing it with this heating element restores full rated heat output and the fast temperature recovery that a busy production fryer requires.
Installation involves disconnecting the fryer from its electrical supply, draining the fry vessel, removing the old element from its mounting flange or bracket, and securing the replacement with a new gasket and the appropriate torque on the mounting hardware. It is recommended to replace the heating element any time a fryer cannot maintain temperature or shows significantly reduced recovery performance, and to inspect elements annually for signs of scale buildup or sheath damage. Pairing element replacement with a fresh O-ring or gasket at the element mounting and a thermostat calibration check will restore the electric fryer to full operating condition.
