Details
This 20 quart dough arm is a replacement for Hobart part number 00-477521 on Hobart A200-series planetary mixers. The “ED” style arm is made for stiff, heavy doughs like bread and pizza dough, pulling the dough through the bowl and folding it back on itself to knead it. It’s made of solid aluminum and sized for the 20 quart bowl.
Dough arms take the hardest load of any mixer attachment, and over time the arm can bend and the hub that locks onto the agitator shaft can wear. A worn hub lets the arm slip or rattle during mixing, and a bent arm can strike or scrape the bowl. Mixing dough at too high a speed or overloading the bowl speeds up that wear and strains the mixer. Replacing a worn dough arm keeps batches consistent and protects the mixer and bowl.
To install, lower the bowl, slide the dough arm onto the agitator shaft, turn it to lock it in place, and raise the bowl. Mix dough on first or second speed only. Use the flat beater for batters and the wire whip for whipping. Wash the dough arm by hand with mild detergent and dry it promptly, since aluminum can discolor in a dishwasher or with harsh chemicals. This dough arm fits Hobart A200, A200C, A200DT, A200F and A200FD mixers. Confirm your model before ordering.
