This 12 quart mixer bowl is a stainless steel replacement for Hobart part number 00-874864 on Hobart Legacy planetary mixers. It holds the batch while the agitator works doughs, batters, icings and fillings, and it sits on the mixer's bowl support so the bowl lift can raise it up to the agitator. On the HL120 it is the standard bowl; on the 20 quart HL200 it is Hobart's 12 quart step-down bowl for smaller batches, used with 12 quart agitators. It is made of stainless steel and sized for 12 quart batches.
Bowls take a lot of abuse in a busy kitchen. They get dropped, banged against tables and bowl trucks, and scraped by agitators, which can dent the wall, bend the rim or loosen the mounting tabs. A bowl that no longer sits square on the support can rock, let the agitator rub the bottom or side, and leave unmixed product in the bowl. Replacing a damaged bowl protects your agitators and gives you even, consistent batches.
To install, fully lower the bowl support, fit the alignment pin into the hole in the bowl tab, set the slotted tab onto the pin, lower the bowl onto the support and swing it back until it locks. Use an agitator sized for this bowl. Wash the bowl with warm water and mild detergent, rinse and dry it, and avoid chlorine cleaners and steel wool, which can pit stainless steel.
