Details
This 10 quart dough hook is a replacement kneading agitator for Hobart C100 and C100T mixers. It’s an “E” style hook in cast aluminum, shaped to fold and stretch dough as the mixer turns, which builds gluten for bread, pizza crust, rolls and bagels. It fits the mixer’s agitator shaft and is sized for the 10 quart bowl, so it works the full batch without leaving dry flour at the bottom.
Dough hooks take the heaviest load of any mixer agitator. Over time the hook can bend, the tip can wear from contact with the bowl, and the hub can loosen on the shaft. A worn hook kneads unevenly, takes longer to develop dough, and puts extra strain on the mixer’s motor and gears. Replacing a worn hook restores consistent kneading and helps protect the mixer.
To install, lower the bowl, slide the hook onto the agitator shaft and turn it to lock it in place, then raise the bowl. Knead on low speed and avoid overloading the bowl with stiff doughs, which can strain the C100. Use the flat beater for batters and the wire whip for whipping. Wash the hook by hand with mild detergent and dry it promptly, since aluminum can discolor in a dishwasher or with harsh chemicals. Confirm your mixer model before ordering.
