Details
This 20 quart pastry knife is a replacement for Hobart part number 00-275467 on Hobart A200-series planetary mixers. The pastry knife cuts fat and shortening into flour for pie crusts, biscuits, scones and other flaky pastry doughs, leaving small pieces of fat in the mix instead of beating it smooth. It is made of NSF-listed aluminum and sized for the 20 quart bowl.
Over time the blades can bend or nick from being run against stiff, cold fat or from being dropped, and the hub that locks onto the agitator shaft can wear. A worn hub lets the knife slip or rattle on the shaft, and a bent blade can strike or scrape the bowl. Replacing a worn pastry knife keeps the cut consistent from batch to batch and protects the bowl and mixer.
To install, lower the bowl, slide the pastry knife onto the agitator shaft, turn it to lock it in place, and raise the bowl. Use it on low speed and stop once the fat is cut to the size you want. Wash it by hand with mild detergent and dry it promptly, since aluminum can discolor in a dishwasher or with harsh chemicals. This pastry knife fits Hobart A200, A200C, A200DT, A200F and A200FD mixers. Confirm your model before ordering.
