This #32 meat grinder knife is a hard edge replacement for commercial meat grinders and mixer-grinders that take #32 size plates and knives, such as Hobart #32 grinders used in supermarket meat departments and butcher shops. The knife sits on the end of the feed screw and turns against the grinder plate, shearing meat as it is pushed through the plate holes. It is made of hardened carbon tool steel with reinforced, resharpenable cutting bars and a broached center hole that reduces stud wear, and it measures about 3.6 inches tip to tip.
Every pass through the grinder dulls the knife edges, and a dull or nicked knife smears and tears meat instead of cutting it cleanly. That shows up as mushy, warm product, slower grinding and extra strain on the motor, and it wears the grinder plate faster. Replacing or resharpening the knife on a regular schedule, and always pairing it with a flat, sharp plate, keeps the grind clean and protects the grinder.
To install, disconnect power, remove the ring and plate, and pull the old knife off the feed screw. Slide the new knife onto the stud with the cutting edges facing out toward the plate, refit the plate and tighten the ring until snug, not overly tight. After use, take the knife off, wash it by hand in warm soapy water, rinse, dry it right away and coat it lightly with food-grade oil, since carbon steel will rust if left wet.
