Details
This #52 meat grinder plate with hub is a replacement plate for commercial meat grinders and mixer-grinders that take #52 size plates and knives, such as Hobart and Biro #52 grinders used in supermarket meat departments and butcher shops. Made in Germany by L&W of special carbon tool steel, it has 1/2 inch holes for a coarse first grind, and its center hub supports the end of the feed screw while the knife shears meat against the plate face.
Each pass of the knife wears the plate face, and over time the hole edges round off and the face goes out of flat. A worn plate smears and tears meat instead of cutting it, which leads to mushy, warm product, slower output, extra strain on the motor and faster knife wear. Replacing the plate, and always pairing it with a sharp #52 knife, keeps the grind clean and consistent.
To install, disconnect power, remove the adjusting ring and the old plate, and check the knife is seated on the feed screw with its cutting edges facing out. Line up the plate notch with the key in the grinder head, seat the plate over the stud and tighten the ring until snug, not overly tight. After use, wash the plate by hand in warm soapy water, rinse, dry it right away and coat it lightly with food-grade oil, since carbon steel will rust if left wet. This grinder plate fits Hobart 4152, 4352, 4552, 4752 and 4852 and Biro AFMG-52 grinders. Confirm your model before ordering.
