Details
This #52 meat grinder plate is a hub-style replacement plate with 1/8 inch (about 3 mm) holes for commercial meat grinders and mixer-grinders that take #52 size plates and knives, such as Hobart and Biro #52 grinders in supermarket meat departments and butcher shops. The plate is the last stop in the grinding head: the knife shears meat against its face and the meat is pushed out through the holes, so the hole size sets the texture of the grind. The 1/8 inch holes give a fine grind for hamburger, sausage and second grinds. It is made in Germany by L&W from carbon tool steel and has a center hub that supports the end of the feed screw.
Each grind wears the plate face where the knife runs against it. Once the face is worn, scored or dished, the knife no longer sits flat, and meat smears and tears instead of cutting cleanly, which shows up as mushy, warm product, slower output and extra load on the motor. A worn plate also dulls a new knife quickly, so plates and knives should be replaced or resharpened together as a matched pair.
To install, disconnect power, remove the ring, take out the old plate and check the knife. With the knife on the feed screw and its cutting edges facing out, slide the plate on so the hub fits over the stud and the notches line up with the keys in the head, then thread the ring on until snug, not overly tight. After use, remove the plate, wash it by hand in warm soapy water, clear the holes, rinse, dry it right away and coat it lightly with food-grade oil, since carbon steel will rust if left wet. This plate fits Hobart 4152, 4352, 4552, 4752 and 4852 and Biro AFMG-52 grinders. Confirm your model before ordering.
