Details
This #52 meat grinder plate is a hubless replacement for commercial meat grinders and mixer-grinders that take #52 size plates and knives, such as Hobart and Biro #52 grinders used in supermarket meat departments and butcher shops. It has 1/8 inch (about 3 mm) holes for a fine grind, the size most often used for hamburger and final sausage grinds. It is made in Germany by L&W from special carbon tool steel.
The plate and knife work as a pair, and both wear with every batch. As the plate face wears or gets nicked, the knife no longer shears cleanly against it, so meat smears, heats up and pushes through slowly, and the small 1/8 inch holes clog more easily. That also puts extra strain on the motor. Replacing a worn plate, or resurfacing it along with the knife, restores a clean, consistent fine grind.
To install, disconnect power, remove the ring, old plate and knife. Put the knife on the feed screw with the cutting edges facing out, fit the new plate over the stud so it seats flat against the knife, then tighten the ring until snug, not overly tight. After use, take the plate off, wash it by hand in warm soapy water, clear the holes, rinse, dry it right away and coat it lightly with food-grade oil, since carbon steel will rust if left wet. This plate fits Hobart 4152, 4352, 4552, 4752 and 4852 and Biro AFMG-52 grinders. Confirm your model before ordering.
