Details

This scalloped knife is a replacement for Oliver part number 7107-7053, the round blade used in Oliver 702 series and 723 bagel and bun slicers. It is a 10 5/8 inch diameter stainless steel blade with a finely honed scalloped edge that cuts cleanly through bagels, buns and rolls as they pass through the slicer's guide, giving an even, consistent split every time.

Over time the scalloped edge dulls, chips or gets nicked from hard crusts and daily use. A dull blade tears and crushes product instead of slicing it, leaves ragged or uneven cuts, and makes the motor work harder. Replacing a worn knife restores clean cuts, keeps throughput up and reduces waste.

Unplug the slicer before servicing and wear cut-resistant gloves. Remove the blade guard, take off the old knife from the blade adapter, mount the new knife in the same orientation, tighten it securely and reinstall the guard before running product. Clean the blade with warm soapy water, rinse and dry it, and avoid abrasive pads that can damage the edge. This knife fits Oliver 702-N, 702-NSE, 702-NSS, 723 and 723-N.
