The Pitco Orifice (40) is a direct replacement gas orifice for Pitco commercial gas fryers, featuring a number 40 drill-size opening that meters the gas supply to the specific burner assembly it serves at the correct flow rate for the designed heat output and gas type. The number 40 drill size is slightly larger than a number 39, and orifice selection is precisely matched to the burner design, gas type (natural gas or LP), and supply pressure to achieve the rated BTU output and correct flame characteristics for the fryer model. Using the correct number 40 orifice maintains the combustion efficiency and heat output the fryer was engineered to deliver.
Over time, orifice openings can become restricted by carbonized grease vapors, mineral deposits from combustion air, or insect nesting material that accumulates in the small drilled passage, reducing gas flow and lowering flame intensity below the minimum needed to heat oil efficiently. Physical enlargement of the orifice from improper cleaning tools or corrosion can have the opposite effect, causing excessive gas delivery, flame instability, and increased CO output.
