The Perfect Fry 83673 Temperature Probe is a genuine OEM replacement thermal sensor for the frying oil temperature monitoring system of Perfect Fry PFA and PFC series ventless countertop fryers. This precision probe is immersed in the frying oil and continuously transmits oil temperature data to the control PCB, which uses this reading to regulate the heating element duty cycle and maintain the programmed oil setpoint throughout the frying cycle. Accurate temperature sensing is essential for food safety, consistent product quality, and proper operation of the fryer's heat management algorithms.
Temperature probes in commercial fryer applications are exposed to continuous heat cycling, oil chemistry changes as the oil ages, and mechanical stress during cleaning and oil change procedures. Over time, the sensing element can drift out of calibration, causing the fryer to maintain the oil at a temperature that differs from the displayed setpoint, which results in undercooked or overcooked product and inaccurate documentation of cooking temperatures.
