The Pitco Digital Thermostat Control, 24V, 195°F RE is a genuine OEM replacement digital thermostat controller for Pitco commercial pasta cookers and low-temperature fryer applications, factory set for a 195°F reference point and operating on a 24V control circuit. It reads the water or oil temperature from the sensing probe and switches the heat source on and off to maintain the setpoint with precision. Using the correct OEM controller ensures the setpoint calibration, deadband, and 24V output switching characteristics match the equipment's heating system design.
Over time, the original digital thermostat control can develop display failures, setpoint drift from memory corruption, or relay contact wear that causes erratic or total loss of temperature regulation. A malfunctioning thermostat in a pasta cooker results in water temperature that is too low for food safety or too high, causing rapid boil-off and product quality problems. Installing the replacement control restores stable, accurate temperature maintenance at the 195°F operating point.
