The Pitco Probe is a direct replacement temperature-sensing probe for Pitco commercial fryers. It measures cooking oil temperature and transmits that reading to the fryer's control system, enabling accurate temperature regulation throughout the frying cycle. Using the correct probe ensures the proper sensing element type, immersion length, sheath diameter, and connector style for accurate, reliable temperature control.
Over time, temperature probes can drift out of calibration from thermal cycling, suffer sheath corrosion from contact with cooking oil and cleaning chemicals, or develop open or short circuits in the sensing element, causing the fryer to display inaccurate temperatures or temperature-related error codes. Inaccurate temperature sensing leads to undercooked or overcooked food, excessive oil degradation, and potential overheat conditions. Replacing the probe with a compatible part restores accurate temperature measurement and precise control.
The probe mounts through a fitting in the fry tank and connects to the control system via a wiring harness. It is recommended to verify probe calibration against a reference thermometer after installation and to recalibrate the control system if necessary. Pairing probe replacement with a check of the control board's temperature input circuit and a boil-out of the fry tank will ensure the fryer returns to service with accurate, stable temperature control.
