The Pitco Radiant - Cast Iron is a direct replacement cast iron heat radiant for Pitco commercial gas fryers. Positioned above the gas burner, this cast iron radiant absorbs the intense heat of the combustion flame and re-radiates it as broad, even infrared heat that distributes uniformly across the bottom of the fry vessel and through the cooking oil. The high thermal mass of cast iron moderates temperature fluctuations and prevents direct flame impingement on the fry vessel, both of which are essential to oil quality and even cooking.
Over time, the original cast iron radiant can crack from thermal shock — especially if contacted by water while hot — corrode on its surface, or warp from repeated extreme temperature cycling, disrupting its even heat distribution capability. A damaged cast iron radiant allows the burner flame to bypass the radiant surface and concentrate heat unevenly on the vessel walls or tubes, accelerating oil breakdown in hot zones and reducing cooking consistency. Replacing it with this cast iron radiant restores the thermal mass and heat-spreading capability the fryer's combustion system was designed to use.
Installation involves placing the replacement radiant on the burner support structure and ensuring it seats correctly without gaps.
