The Pitco Safety Thermostat LCHM is a direct replacement high-limit safety thermostat for Pitco commercial fryers equipped with the LCHM (Low Cook High-limit Module) safety circuit. It monitors fryer oil temperature and interrupts the heat circuit if the oil exceeds a safe threshold, preventing an uncontrolled temperature runaway that could ignite cooking oil. Using the correct safety thermostat ensures the trip point is factory-calibrated to Pitco's specified high-limit temperature for the LCHM system.
Over time, the original safety thermostat can develop calibration drift, making it trip prematurely at normal operating temperatures or, more dangerously, fail to trip at all when a true over-temperature condition occurs. Causes include repeated thermal cycling, oil contamination of the sensing element, and fatigue of the internal bimetal or contact mechanism. Installing the replacement safety thermostat restores the critical last line of defense against a fryer fire.
The thermostat mounts in the original capillary tube or bulb pocket in the fryer vat and connects to the high-limit circuit using the existing wiring harness. It is recommended to test the safety thermostat function during every scheduled preventive maintenance visit and replace it immediately if it fails to trip at the rated temperature or trips below normal operating temperatures. Pairing the new safety thermostat with a full high-limit circuit continuity test will confirm the entire safety chain is operational.
