Manitowoc ice machine sanitizer is an NSF-certified, food-safe solution that eliminates bacteria, mold, yeast, and slime-forming organisms from all water-contact surfaces of Manitowoc commercial ice machines following a descaling cleaning cycle. Used as the second step in the manufacturer's two-step cleaning and sanitizing procedure, the sanitizer coats all internal water-side surfaces with a disinfecting solution that inhibits microbial regrowth before the machine returns to ice production. Regular sanitizing is required by most health department codes governing commercial ice machine operation.

Failure to sanitize a commercial ice machine on a regular schedule can result in the development of bacterial biofilm on evaporator surfaces, water troughs, distribution systems, and ice storage bin walls. Biofilm-contaminated ice presents significant food safety risks, and machines found with visible mold or slime during health inspections may be ordered out of service immediately.
