With a 6-inch by 6-inch #12 mesh basket, this skimmer is used to skim floating crumbs, batter fragments, and food debris from the oil surface and upper oil column during frying operations, preventing debris from darkening the oil and contaminating cooked product. Over time, the original skimmer mesh can accumulate baked-on deposits that clog the openings, corrode at the wire welds, or suffer frame deformation that makes the skimmer difficult to use effectively. A clogged or damaged skimmer fails to capture debris efficiently, leaving more particulate matter in the oil to carbonize and accelerate oil degradation.
