The Pitco Thermostat Gs, 3/8 X 4-1/2, 60 is a direct replacement capillary thermostat for Pitco commercial fryers. This GS-series thermostat features a 3/8-inch bulb that is 4-1/2 inches long, with a 60-inch capillary, and is calibrated for the temperature range required by Pitco gas fryer models. Using the correct thermostat ensures accurate temperature setpoint control and proper burner cycling to maintain oil at the desired frying temperature.
Over time, the capillary tube can develop stress fractures from flexing during servicing, and the sensing bulb's thermal fill fluid can leak, causing the thermostat to lose calibration or fail entirely. A drifted or failed thermostat results in oil temperature running above or below the setpoint, negatively affecting food quality and accelerating oil degradation. Replacing the thermostat with the GS-series unit restores calibrated temperature control for the gas fryer.
