The Pitco Thermostat GS is a direct replacement thermostat for Pitco commercial gas fryers in the SG and related GS model families, designed to control operating temperature by cycling the main gas valve based on the oil temperature sensed by its immersion bulb. This thermostat is calibrated to the temperature range and control differential specified for these fryer models and provides reliable on-off control of the gas burner system throughout the frying session. Using the correct GS thermostat ensures accurate set-point calibration and the proper capillary length for the specific vat configuration.

Over time, the capillary bulb charge can weaken, causing the thermostat to lose sensitivity and allow oil temperature to drift above or below the set point, or the internal micro-switch contacts can fail and leave the burner permanently on or off. Inaccurate temperature control from a worn thermostat increases oil turnover costs, compromises food quality, and can trigger the high-limit safety thermostat if the oil overheats unchecked. Replacing the worn component with the Pitco-compatible GS thermostat restores the precise temperature differential and response time needed for stable frying operation.

Replacement involves draining the fryer, positioning the new sensing bulb in the correct vat location per the service manual, and connecting the thermostat to the gas valve control circuit. It is recommended to calibrate the new thermostat against a certified reference thermometer immediately after installation and to verify accuracy on a scheduled basis. Pairing thermostat replacement with an inspection of the gas valve, pilot assembly, and high-limit thermostat will ensure the complete gas control train functions correctly after the repair.
