The Pitco Thermostat Kx, 3/8 X 5-5/8, 36 is a direct replacement capillary thermostat for Pitco commercial gas and electric fryers. This KX-series thermostat uses a 3/8-inch diameter, 5-5/8-inch bulb with a 36-inch capillary to sense oil temperature and cycle the heat source on and off to maintain the set cooking temperature. Using the correct thermostat ensures the proper temperature range, differential, and bulb dimensions for accurate control in the Pitco fry tank.
Over time, the capillary tube can kink, develop a leak in the sealed thermal fluid system, or the sensing bulb can corrode, causing the thermostat to lose its temperature-sensing function and either allow the oil to overheat or fail to maintain the set temperature. Inaccurate temperature control degrades food quality and accelerates oil breakdown. Replacing the thermostat with the Kx-series unit restores precise temperature regulation at the correct control range.
Installation requires removing the bulb from its immersion well or fitting in the fry tank, routing the capillary carefully to avoid kinking, and securing the thermostat body to the control panel bracket. It is recommended to calibrate the thermostat against a calibrated reference thermometer after installation and to adjust the calibration screw if necessary. Pairing thermostat replacement with a test of the hi-limit thermostat and a cleaning of the fry tank will ensure the fryer is operating safely within its designed temperature limits.
