The Pitco Thermostat KX is a direct replacement thermostat for Pitco commercial fryers, designed for models in the KX product family that require this specific thermostat configuration for operating temperature control. It senses oil temperature through a capillary bulb immersed in the cooking oil and opens or closes the control circuit to cycle the burners or heating elements and maintain the selected frying temperature. Using the correct KX thermostat ensures the proper temperature range, differential, and bulb geometry for accurate, reliable operation in the designated Pitco fryer models.

Over time, the thermostat's capillary bulb can lose charge, the sensing element can drift out of calibration, or the internal switching contacts can wear and become erratic, causing the fryer to run hotter or cooler than the set point or to cycle erratically. An inaccurate thermostat results in inconsistent food quality, increased oil degradation at elevated temperatures, and potential activation of the high-limit safety cutout. Replacing the worn thermostat with the Pitco-compatible KX unit restores accurate, stable temperature control across the full operating range of the fryer.
