The Pitco Thermostat RX is a direct replacement thermostat for Pitco commercial fryers in the RX product series, providing accurate operating temperature control through a capillary-bulb sensing element immersed in the cooking oil. The thermostat cycles the burner or heating element on and off to maintain the operator-selected frying temperature within the tight differential required for consistent product quality. Using the correct RX thermostat ensures proper bulb dimensions, capillary length, and temperature range calibration for the specific Pitco fryer models that require this component.
Over time, the capillary charge can dissipate, internal contacts can pit or weld closed from electrical arcing, or the sensing bulb can become coated with carbonized oil residue that delays its temperature response, all of which result in inaccurate temperature control. A malfunctioning thermostat can cause oil to overheat, accelerating breakdown and increasing the risk of fire, or it can allow the oil to fall below the minimum frying temperature, producing greasy, undercooked food. Replacing the faulty thermostat with the Pitco-compatible RX unit restores responsive, accurate temperature regulation.
