The Burner (Part# 226916/P) is a genuine OEM Town Food Service replacement part for use in Town stock pot ranges and wok ranges. Town's high-output gas burners produce the intense, concentrated heat that high-volume wok cooking and stock preparation demand, and each burner pattern is engineered for a specific flame spread and heat output. This 16-tip volcano burner is drilled for propane gas, concentrating its flame pattern upward in the classic volcano profile prized for wok searing.
Burners in daily commercial service are subject to tip clogging from grease, food debris, and combustion deposits, as well as corrosion and warping from prolonged exposure to extreme heat. Symptoms of a burner that needs service or replacement include weak or yellow flames, tips that will not light, uneven flame distribution across the burner head, and noticeably longer cooking times.
Burner replacement should be performed by a qualified service technician with the gas supply shut off. Disconnect the gas line and pilot tubing, remove the existing burner from its mounting, and install the new Burner in the same position and orientation. Leak-test every gas connection with an approved solution and confirm a crisp, blue flame at all tips before returning the range to commercial service.
