The FDO Thermostat, Z88-186-00-72 (Part# 249007) is a genuine OEM Town Food Service replacement part for use in Town gas cooking equipment. The thermostat senses cooking temperature and modulates gas flow to hold the operator's setpoint, and accurate thermostat response is essential for consistent product quality. This FDO-style gas thermostat (cross-reference Z88-186-00-72) provides dial temperature control on Town gas cooking equipment.
Thermostat failure shows up as temperature overshoot, undershoot, or drift; food that cooks inconsistently at the same dial setting; or a unit that no longer modulates and runs at full fire. Calibration drift can sometimes be corrected, but a thermostat with a failed sensing bulb or worn internals must be replaced.
Thermostat replacement should be performed by a qualified service technician with the gas supply shut off.
