Details

The Pitco T'Stat - GS is a direct replacement operating thermostat for Pitco commercial gas fryers in the SG-series product line, functionally equivalent to the GS thermostat and providing precise on-off control of the main gas burner based on cooking oil temperature. Its capillary sensing bulb is immersed in the fry oil and operates the control switch that opens and closes the gas valve circuit to maintain the selected frying temperature throughout the cooking session. Using the correct thermostat ensures the factory-specified temperature range and control differential that Pitco designed into these fryer models.

Over time, the thermostat's internal capillary charge diminishes, contacts wear from repeated switching cycles, or the sensing bulb becomes insulated by carbonized oil deposits, all of which degrade temperature accuracy and burner control reliability. Poor temperature control leads to inconsistent food quality, accelerated oil degradation from overheating, and increased risk of safety-limit tripping events that interrupt service. Replacing the worn thermostat with the Pitco-compatible T'Stat - GS restores the correct switching differential and temperature accuracy required for dependable frying performance.

Installation requires draining the fry vat, routing the new capillary bulb to its specified position, and securing the thermostat body to its mounting bracket before reconnecting the control wiring. It is recommended to verify the thermostat's calibration with a reference thermometer after installation and to include thermostat inspection in every scheduled preventive maintenance program. Pairing thermostat replacement with a contemporaneous inspection of the pilot assembly and gas valve will ensure the entire gas control system is functioning correctly.
