Constructed from heavy-gauge stainless steel wire, the rack sits within the HHD cavity and supports food product trays or pans at the correct position within the impingement air field, ensuring products receive optimal exposure to the hot air jets from the upper and lower jetplates. Using the correct wire rack for the HHD ensures the rack's height, footprint, and wire gauge are matched to the HHD cavity dimensions and jetplate positioning, maintaining the designed gap between the product and the jetplate apertures that determines impingement velocity at the product surface.

    Over time, the original HHD cooking rack can develop warped or bent wire members from the weight of heavy product loads and thermal cycling in the high-temperature batch oven environment, along with surface oxidation and carbon buildup that is difficult to remove, which leads to product pans sitting at incorrect angles within the cavity, inconsistent impingement exposure across the product surface, and hygiene concerns from deteriorated surfaces that are no longer cleanable to commercial kitchen standards.
